Procedimiento para obtener modelos lineales de cinética de color en frutosResumen. Se presenta una metodología experimental para obtener modelos lineales que predicen la tasa de cambio de color utilizando como modelo el proceso de maduración del tomate cherry (Solanum lycopersicum L). Se observo que el cambio de color verde-amarillo-rojo solo dependía de los componentes rojo y verde en su imagen digital, y que ambos componentes presentaban una relación lineal con el tiempo, mientras que el componente azul permanecía constante. Se presentan imágenes digitales e histogramas que muestran el comportamiento de la búsqueda de los componentes durante un período de quince días. Con base en los modelos lineales obtenidos, se estimó una tasa de cambio de color de trece y siete píxeles por día para los componentes rojo y verde, respectivamente.Downloads
